Secret Ingredient Brownies

Secret Ingredient Brownies

These brownies are so moist and delicious that you won’t believe how much health is packed into them!

Makes 9-12 brownies

Ingredients:

  • ½ cup oats
  • 2 tablespoons ground flax seeds
  • 15 oz can black beans (drained and rinsed well)
  • 2 tablespoons cocoa powder 
  • ¼ teaspoon salt (optional)
  • ¼ cup pure maple syrup, honey, or agave
  • 6 pitted medjool dates, coarsely chopped (if dry soak in warm water 20 minutes)
  • 4 tablespoons coconut sugar (or brown sugar)                 
  • 3 tablespoons canola oil
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons water
  • ½ teaspoon baking powder
  • ½ cup chocolate chips (not optional)
  • ¼ cup coarsely chopped walnuts, optional
  • 2 tablespoons chocolate chips, for topping, optional

Instructions:

  1. Preheat oven to 350 F.
  2. Add oats and flax to food processor and process to a coarse flour. Add all remaining ingredients except chocolate chips and nuts to the food processor, and blend until completely smooth. Stir in the ½ cup chips and nuts (if using) and pulse a few times to incorporate.
  3. Spread into a greased 8×8 pan. Sprinkle the additional chocolate chips over the top and press in.
  4. Cook the black bean brownies 25 minutes. Let cool 15 minutes before cutting.

Dessert Farinata

Dessert Farinata

What a great way to get beans into dessert! You will see that the farinata (also called socca) is a great base for all kinds of sweet or savory toppings. 

Makes 6 servings

 

Ingredients:

  • 1 cup chickpea (garbanzo) flour
  • 1 ¼ cups lukewarm water
  • 2 teaspoons avocado oil or olive oil
  • Chia jam or unsweetened all-fruit jam
  • Fresh fruit (such as whole berries or chopped stone fruit)
  • ½ cup thick cashew cream
  • 2 -3 teaspoons maple syrup

 

Instructions:

  1. Combine garbanzo flour and water in a bowl; whisk until batter is smooth. Cover bowl and let stand at room temperature for at least 15 minutes. Can be made ahead and refrigerated overnight. 
  2. Preheat oven to 450 degrees F.
  3. Place a 10-inch cast-iron skillet (or other oven proof pan) over high heat and heat until very hot. Pour 2 teaspoons oil in skillet and coat bottom of skillet completely. 
  4. Quickly pour batter into hot pan and carefully transfer skillet to preheated oven.
  5. While the farinata is cooking, stir the cashew cream with maple syrup to desired sweetness and set aside.
  6. Mix the fruit with fruit jam and set aside.
  7. Bake farinata in the preheated oven until  browned and crusty, about 20 minutes. Transfer immediately to a plate, tear into wedges, and top with fruit mixture and maple cashew cream. Serve hot, while still crispy on the edges.

Chewy Almond Cookies

Chewy Almond Cookies

These cookies are great when you need something sweet in a hurry.  Cook till slightly browned on the edges for a combination of crisp and chewy textures.  

Ingredients:

  • 8 oz almond paste
  • 1/2 cup sugar
  • 1 tablespoon aquafaba
  • 1/2 teaspoon vanilla or almond extract
  • 1/4 cup sliced almonds

Instructions:

  1. Preheat oven to 325. Line baking sheets with parchment paper.
  2. In large bowl, break almond paste into pieces. Add sugar and beat until sandy in texture. Add aquafaba and vanilla, beat until smooth.
  3. Drop by rounded teaspoons onto lined baking sheet, 1 inch apart.
  4. Place a piece of parchment over each cookie and press to ½ inch thickness with the bottom of a flat glass. Press sliced almonds into surface.
  5. Bake 22 minutes until lightly browned. Cool and remove from parchment.

Berry Crisp

Berry Crisp

What a great way to add fresh seasonal berries to your diet.  Berries are full of fiber, anthocyanins, and other phytonutrients, and boy are they delicious!

Makes 8 servings

Ingredients:

Fruit

  • 8 cups berries (raspberries, blueberries, blackberries, etc.), cherries, or even stone fruit
  • 4 Tbsp maple syrup
  • 2 Tbsp cornstarch
  • 1 Tbsp lemon juice

Topping

  • 1 cup almond flour
  • ½ cup rolled oats
  • 1 cup roughly chopped nuts (pecans, walnuts, etc)
  • ½ cup coconut sugar (or organic cane sugar)
  • ¼ tsp sea salt
  • 4 Tbsp coconut oil or plant butter

Instructions:

  1. Preheat oven to 350 degrees F and place fruit into a 9×13-inch dish.  Add maple syrup, cornstarch, and lemon juice, tossing to coat.
  2. In a mixing bowl, add the almond flour, oats, nuts, sugar, and salt. Stir to combine. Next, add coconut oil and mix until evenly distributed.
  3. Place the topping evenly over the fruit. Bake uncovered on a center rack for 40-45 minutes or until the fruit is bubbling and the top is golden brown.
  4. Let cool 15 minutes and serve with coconut whipped cream (see Sauces section) or plant-based ice-cream.

Chocolate Chip Cookies

Chocolate Chip Cookies

When you need a treat, try this really delicious cookie recipe, adapted from America’s Test Kitchen’s Vegan for Everybody Cookbook. Remember to build in extra “resting” time for this one. It is necessary for the ingredients to combine.  This works just as well with gluten free flour.

Makes 16 to 24 cookies

Difficulty level: easy

Ingredients:

  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1⅓ cups packed organic light brown sugar
  • ½ cup plant based butter, melted and cooled
  • 6 tablespoons water room temperature
  • ⅓ cup unsalted creamy almond butter
  • 2 teaspoons vanilla extract
  • 2 tablespoons ground flax seeds
  • 1¼ cups (7½ ounces) semisweet or dark chocolate chips or chunks
  • 1/2 cup chopped walnuts (or other favorite nut), optional

Instructions:

  1. Mix flour, baking powder, baking soda, and salt together in bowl. Beat sugar, melted plant butter, water, almond butter, and vanilla in large bowl until well combined and smooth. Beat in ground flax seeds.  Using rubber spatula, stir flour mixture into oil mixture until just combined. Add additional water if needed to form a batter like consistency, 1 tablespoon at a time. Fold in chocolate chips and nuts.
  2. Cover bowl with towel and let rest at room temperature for 1 hour to 4 hours. (Or refrigerate for up to 24 hours; let sit at room temperature for 30 minutes before proceeding.)
  3. Adjust oven rack to middle position and heat oven to 350 degrees. Line 2 baking sheets with parchment paper. Scoop dough in 2 to 3 tablespoon portions, 2 inches apart on prepared sheets.
  4. Bake, 1 sheet at a time, until light golden and edges have begun to set but centers are still soft, 12 to 14 minutes, rotating sheet halfway through baking. Let cookies cool completely on sheet.

Pecan Pie Bites

Pecan Pie Bites

One bite will take you back to your favorite Thanksgiving pecan pie. Super simple and a sure way to quench your craving for something sweet.

Yield: Makes 12 balls 

Difficulty level: very easy

Ingredients:

  • 1 ½ cups pecans
  • 1 cup medjool dates (about 12), pitted and chopped (fresh is best)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • pinch of salt, optional

For rolling, optional:

  • chopped pecans
  • shredded coconut
  • sunflower seeds
  • crushed graham crackers
  • cocoa

Instructions:

  1. Place ingredients in bowl of a food processor and process until coarsely combined. It should hold together but have a chunky texture. If it is too dry to hold together, add 1 tablespoon of water at a time while blending.
  2. Using a 1 tablespoon measuring spoon, scoop out rounded tablespoons and roll dough into 1-inch balls.
  3. Roll in any one of the optional ingredients.
  4. Keep in the refrigerator for up to 4 weeks or freeze.

Chocolate Mousse

Chocolate Mousse

This is an extremely easy, amazingly light and fluffy chocolate dessert that no one (and I mean no one) will know is made with tofu. It is a delicious way to get more of those important antioxidant isoflavones into your diet.

Makes 3 servings

Ingredients:

  • 4 ounces semi-sweet or dark chocolate chips (or roughly chopped chocolate bar)
  • 1 package (12 ounces) organic silken tofu at room temperature, well drained
  • 2 tablespoons maple syrup
  • Optional toppings: raspberries, strawberries, blackberries, chocolate shavings, fresh mint leaves

Instructions:

  1. Place the silken tofu (make sure that it is at room temperature and well drained of excess water) and maple syrup in a food processor and blend until very smooth.

  2. Melt the chocolate in the microwave in 30 second intervals, stirring between each heating, until the chocolate is melted.

  3. Add the melted chocolate to the food processor and blend, scraping down the sides as needed until well combined.

  4. Scoop the mixture into 3 ramekins or small glasses, and refrigerate for at least 30 minutes.

  5. To serve, garnish with desired toppings.

Warm Tapioca Pearls with Banana & Peanuts

Warm Tapioca Pearls with Banana & Peanuts

This is a really special, comforting dessert. The chopped nuts add an unexpected touch of texture.

Makes 4 servings

Ingredients:

  • 2 cups water
  • 1/2 cup small tapioca pearls (not quick-cooking minute tapioca)
  • 1 cup unsweetened canned coconut milk (light or full-fat)
  • 1/3 cup granulated sugar, or to taste
  • 1/2 teaspoon vanilla
  • 5 bananas, peeled, cut lengthwise and then into bite-sized thickness
  • 1/4 cup chopped, roasted peanuts

Instructions:

  1. In medium saucepan, bring water to boil over high heat. Add tapioca; stir well.
  2. Reduce heat to medium. Simmer 15 minutes or so until tapioca pearls have mostly become clear (only a little white remaining).
  3. Add coconut milk and sugar; stir well. Simmer until tapioca is clear and cooked, about 4 minutes more. Remove from heat, stir in vanilla and then bananas. Let rest to warm bananas.
  4. Divide among 6 or 8 dessert cups or bowls. Serve immediately or within 2 hours. Garnish with chopped peanuts just before serving.

(If you will be storing some of this in the refrigerator, store without the bananas. Rewarm when serving – you may need to add a little water or coconut milk to thin slightly – then stir in bananas. Top with nuts before serving.)
