Quick Pickled Red Onions

Adds a little tartness, crunch and extra flavor to sandwiches, tacos, etc…
Ingredients:
- 1/2 cup water
- 1/2 cup distilled white vinegar
- 2 tablespoons sugar or sweetener of choice (optional)
- 1/2 teaspoon salt
- 1 bay leaf
- 1 dried red chili or a pinch of red chili flakes
- 1 red onion, thinly sliced
Instructions:
- In a small saucepan, bring the water to a boil.
- Add the vinegar, sugar, salt, bay leaf, and chili. Add the onions, reduce the heat, and let simmer for 1 minute.
- Remove the pan from the heat and let cool completely.
- Place in jar and refrigerate.
