This recipe is quick, easy, and delicious enough to become a family favorite.
Makes 4 servings
Ingredients:
1 small butternut squash (or 4 cups of pre-cut)
1/2–1 cup water
1 tablespoon maple syrup
1 tablespoon reduced-sodium soy sauce
Instructions:
If using a whole squash, peel and seed and cut the squash into 1-inch cubes. This will provide approximately 4 cups.
Place cubed squash into a pot with ½ cup water, maple syrup, and soy sauce. Cover and simmer over medium heat until the squash is fork tender, about 15 minutes, adding additional water if needed.
